Apple Walnut Chicken Salad
w/ Raspberry Vinaigrette

1 Head Romain
lettuce
4oz Gorgonzola
Cheese
6oz Chicken
breast
1 large green
apple
56g Walnut/Craisin mix for
topping salads
Light Raspberry Walnut Vinaigrette Dressing (I use
wishbone)
Directions:
- Cut and rinse romaine lettuce and combine with spring mix
- Divide into 4 equal portions (about 85 grams each)
- Top each salad with the following
- 1 oz gorgonzola cheese
- 1.5oz chicken breast
- equally divide the apple (about 2 1/4 oz each)
- 14g walnut/craisin mix
- 3 tbsp dressing
**If you only use 2 tbsp of
dressing you can subtract 35 calories**
